I’m trying something new with this post: a recipe.
The creative lifestyle and business require good, healthy food to give you energy when you’re on the go. So why not share a simple recipe I make just about every week?
This one is pretty easy to make and only takes about 30 minutes between prep and actual cooking time. Let’s get started.
Baked Chicken Is the Best
Let’s be honest, each day is busy. Whether you’re doing your day job, snapping photos, drawing, painting or chasing after the kids, you have a lot on your plate.
Why not put some good, natural food on it too?
You’ll need a baking sheet large enough to hold 5-7 thin-sliced chicken breasts.
Cover the sheet with aluminum foil. Next, preheat your oven to 400 degrees.
- 5-7 thin-sliced chicken breasts.
- 1/2 cup of extra virgin olive oil
- Italian seasoning
- Garlic powder
- 1 bag of steam-in-the-bag broccoli
While your oven is heating up, place the chicken in two rows on your aluminum covered baking sheet.
Next, baste each chicken breast with the olive oil. Be generous. Once covered with oil, sprinkle the Italian seasoning and garlic powder on each breast to taste.
Once the oven is pre-heated, put the chicken on the center rack and bake for 20 minutes.
Cook the broccoli with about 5 minutes left on the chicken.
You can substitute any veggie you like for the broccoli.
Once your chicken and veggies are ready, fill your containers for each day of the week. This is where I save the most time. I just reach into the fridge every morning and my lunch is ready to go.
I do this on Sunday afternoon and my week is ready to go.
